THE STEPS
In just 3 hours, explore the flavors and traditions of Peru through a six-step culinary journey in Cusco. This hands-on class introduces the history of Peruvian cuisine, basic kitchen concepts, and a guided tasting of tropical fruits and Andean superfoods. You will also enjoy a pisco tasting and learn how to prepare two classic cocktails: the Pisco Sour and Chilcano de Pisco.
The experience continues with the preparation of two of Peru’s most iconic dishes: fresh ceviche and Lomo Saltado made with alpaca, all guided by professional chefs. To round out the class, you will sample Criollo and Novo-Andean appetizers such as cuy (guinea pig), ajà de gallina, stuffed potatoes, and causas, among others.
Ideal for food lovers and cultural explorers alike, this Cusco cooking class offers a memorable blend of tradition, flavor, and hands-on discovery.
STEP 1: THE INTRODUCTION
Your instructor/Chef will begin with an overview of Peruvian culinary culture, highlighting its history, biodiversity, and geography, while also explaining the concepts and gastronomical theories that shape it.
STEP 2: COLORS, AROMAS AND TEXTURES
Our interpretive “Market” space brings together the kinds of products found at San Pedro Market, arranged in a clean, organized, and safe setting. Here you will find Peruvian potato varieties, different types of aji peppers, corn, quinoa, and many other ingredients.
STEP 3: THE EXOTICS
Thanks to its tropical location, Peru offers an abundance of fruit. In this step, you will have the chance to enjoy seasonal fruits with sweet, acidic, and semi-sour flavors.
STEP 4: A SEA OF FLAVORS
Your first dish will be a delicate Peruvian ceviche prepared with fresh coastal fish and local ingredients that give it its distinctive and unforgettable character.
STEP 5: PISCO O'CLOCK
Here, you will taste Peru’s celebrated liquor while discovering its fascinating history. The step concludes with the preparation of a Pisco Sour and a Chilcano de Pisco.
STEP 6: WOK-ING TIME
After the Chef’s demonstration and guidance, all participants will prepare their own Lomo Saltado using wok sautéing techniques. The class ends with a shared meal and the recipes for the dishes prepared during the experience.

Located at the main Tahuayo Lodge, this private cabin comes with its own bathroom and access to a wider range of activities than the Research Center. With its open-air, rustic setting and cozy queen bed, the suite offers a comfortable base for days filled with Amazon adventure and quiet moments of rest.

Set within the Amazon Research Center (ARC), these cabins offer a more secluded and untouched forest stay, located about 2 hours upriver from the main lodge. The ARC is officially recognized as a research institution by Peru’s national science council, CONCYTEC, adding a unique scientific setting to this remote Amazon experience.
Private, simple, and comfortable, the cabins provide an excellent base for guests who want to spend more time exploring the surrounding wilderness. More than 75 km of trails extend through a remarkable range of ecosystems, including igapo, bajial, high and low restinga, and palm swamp. This area is especially appealing for travelers interested in longer hikes and a richer chance of spotting wildlife, with species such as jaguars and giant river otters among the highlights.
